Oven-Roasted Sweet Potato Wedges - GFCFSF

3 sweet potatoes (about 1 1/2 pounds), each cut lengthwise into wedges
4+ tablespoons olive oil
Fresh Rosemary (optional)
Kosher salt, freshly ground pepper

Preheat oven to 425°.

Toss sweet potatoes, rosemary and oil on a large rimmed baking sheet or cast iron flat griddle; season with salt and pepper.

Roast, turning once halfway through, until golden brown and crisp, 25-30 minutes.
