PA Dutch Apple Baby Pancake - GFCFSF

Serves 6. This recipe is highly adaptable. These can be made with other fruits, savory (using herbs and caramelized onions, etc.), meats like bacon, whatever you like. If making savory, skip the spices listed below. You could also use Daiya's Havarti, chopped into small cubes.

2 large organic apples, preferably Pink Lady or other strong flavored apple
4 tablespoons Earth Balance GFCFSF margarine
1/3 cup brown sugar, honey or preferred sweetener
4 eggs
1 cup GFCF flour mix
1 teaspoon salt
1 teaspoon baking powder
1 cup CF milk
1 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
1/4 teaspoon cardamom (optional)

Preheat oven to 425.

Using a cast iron, oven-safe pan, melt margarine over medium high heat. Cook apples in margarine, browning them well on both sides. Meanwhile, mix eggs, milk sub, flour, salt, sugar, baking powder and spices (if using). Pour batter over apples. Place pans in preheated oven for 15-20 minutes. It may take longer in a big pan. Flip out onto plate upside down. Sift powdered sugar on top, if desired.

Note about pans: The pancake will rise more if using several smaller pans and will take less time to bake.
