Pancakes with Peaches and Peach-Cinnamon Topping

Peach Cinnamon Topping:

  • 2 cups smashed, peeled peaches, plus some for top (buy 4 peaches)
  • 1/2 tablespoon lemon juice
  • 1/4 cup agave nectar
  • 3/4 teaspoons cinnamon

 

Peel and slice the peaches (or use frozen).  Mix all ingredients in a saucepan and cook 5-8 minutes or until fruit is very soft. Remove some of the peaches for topping, then smash remaining peaches with masher or hand blender.  Cook another 5 minutes, until thickened.

Make pancakes, top with jam, then peaches.
