Peach-Almond Cobbler - GFCFSF

You can use any stonefruit (apricots, nectarines, plums) for this versatile recipe!

Filling:
3 pounds peaches, skinned and cut into wedges
1/2 cup sugar
1 tablespoon arrowroot or cornstarch
1/4 teaspoon salt
1 tablespoon brandy (optional)

Topping:
1/2 cup GF flour mix
1/2 teaspoon Xanthan gum
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup GFCFSF margarine, room temperature
3.5 ounces GF almond paste (Love n' Bake brand is GF or make your own)
1/2 cup sugar
3 large eggs, room temperature
1/2 cup sliced almonds

Toss peaches, sugar, starch, salt, and brandy, if using, in a large bowl. Transfer to a 13"x9” baking dish; set aside.

Preheat oven to 350°. Using an electric mixer, beat margarine, almond paste, and sugar until light and fluffy, about 4 minutes. Add eggs one at a time, beating to blend after each. Mix in dry ingredients.

Pour batter over fruit (batter will even out during baking). Sprinkle with almonds. Place baking dish on a rimmed baking sheet and bake until topping is golden brown and fruit juices are thick and bubbling, 50–60 minutes. Let cobbler sit 20 minutes before serving.

Note: If top starts getting too brown during baking, loosely cover with parchment paper or foil.
