Peach Pecan Crisp - GFCFSF
6-8 ripe peaches, halved, pits removed and sliced
1 cup gluten free rolled oats
1/4 cup almond meal
1/4 cup GF flour or 1/4 cup more almond meal
1/2 cup chopped pecans
4 Tbsp packed light brown sugar, or maple or coconut sugar
1/4 teaspoon salt
4 Tbsp coconut oil, plus more for coating pan
Preheat oven to 350 degrees F and lightly coat an 8x8 (or similar size) baking dish with coconut oil. Pour in peaches, spread flat.
In a mixing bowl, add remaining ingredients and, using your hands or a wooden spoon, mix until all everything is evenly distributed. If the mixture is too dry, add more coconut oil until the mixture sticks together a little.
Cover the fruit in an even layer and bake for 40-45 minutes, or until the fruit is bubbling and the top is crisp and golden.
