Pork Tenderloin (Quick and Easy)
This delicious pork takes just 5 minutes to prepare and doesn't require any effort once it's in the oven.
1 lb pork tenderloin
1 teaspoon lemon rind, grated
1 tablespoon fresh lemon juice
1 tablespoon honey
1 teaspoon coarse mustard
1 teaspoon fresh rosemary, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons olive oil
Mix all ingredients well, except pork, in bowl. Place loin in bowl and coat evenly with sauce. Cover and refrigerate up to 24 hours. (This is not mandatory and is almost as good with no marinating time!)
Place in roasting pan and cover with any remaining sauce. Put 2 tablespoons water in bottom of pan. Cook in oven for 40 minutes at 350 degrees or until meat registers 145 degrees in center. Remove from oven, loosely cover with foil and let set for 20 minutes before you cut it so the juice will work back into the meat - don't skip this step. Slice into 1/2 inch slices.
