Potato and Bacon Tots - GFCFSF

This is a fun recipe to let your kids help with. Little hands are perfect for forming the tots!

2 large sweet potatoes unpeeled OR 3-4 russet potatoes, peeled
4-5 slices bacon, with 2 tablespoons reserved fat
1-2 tablespoons arrowroot or cornstarch
salt and pepper to taste
fresh chives, chopped, optional

Cook bacon, set aside. Boil potatoes until almost done, but not quite. You don't want them falling apart because you have to grate them, but they need to be almost form tender. Drain and remove to plate to cool. When cool, grate the potatoes in a bowl. Crumble bacon, mix all ingredients. Add 2 tablespoons bacon fat, mix very well and form into tot shapes.

You can either deep fry these or lightly cover a pan with oil of your choosing and bake at 375 degrees for 20 minutes, turning halfway through. You can also form these and freeze them to cook later.
