Potato-Zucchini Latkes

  • 2 russet potatoes
  • 1 zucchini
  • 2 eggs
  • 3 green onions, chopped
  • oil for frying
  • salt and pepper, to taste
  • Apple sauce (optional)

 

Heat oil in pan over medium heat. Using a standard grater, grate zucchini and russet potatoes. Mix with eggs, green onion, salt and pepper. Mound in pan to form pancakes, cook until set on one side, flip and cook until done. Be careful, when the mixture hits the oil, it can splatter. Serve with applesauce.

 

Tip - if your child won't eat green things, omit the green onions (you can use minced white onion if you want the flavor) and peel the zucchini before grating.
