Quick Garlicky Spinach and Tomato Stir Fry
- 3 medium beefsteak-type tomatoes (or 6-8 romas)
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 4 cups baby spinach leaves
- Salt and pepper
Quarter the tomatoes and take out the seeds, then cut the shells into strips and dice them. Heat oil in pan, add garlic, cook for 30 seconds. Add in tomatoes, salt, pepper and lemon. Stir. Add in spinach and stir to coat thoroughly. Cook for 2-3 minutes only (wilting is what you are trying to achieve, rather than cooking all the way to soft).
