Quick Teriyaki Chicken - GFCFSF
1/4 cup honey
2-3 tablespoons minced ginger
1/3 cup water
1/3 cup "Coconut Aminos Soy-Free Soy Sauce"
4 T cornstarch or arrowroot
1/2 teaspoon red pepper flakes
1 tablespoon oil
1.5 pounds boneless skinless chicken thighs, fat removed, chopped
salt and pepper, to taste
2 cloves garlic, chopped
3 carrots, sliced on the bias
One head of broccoli, cut into florets and steamed (or you can sub frozen, defrosted)
In a small pot over medium heat, add honey, ginger, coconut aminos, red pepper flakes. Mix water and cornstarch into a slurry in a small dish, add to pan and stir well. Cook 5 minutes until thick. Remove from heat and set aside.
In a large pan over medium heat, add oil and chicken. Cook for 5 minutes, add garlic, salt and pepper, stir and cook another 5 minutes. Add carrots, sauce and broccoli, stir well, cover and cook for another 5-10 minutes. Serve over rice.
