Rainbow Salad - GFCFSF/SCD

Grill chicken, steak, shrimp or pork (or use leftover cooked meat)
Grill red peppers and red onion slices
Cook bacon and cut into 1” pieces
Hard boil a few eggs and chop them into quarters
If stonefruit (peaches, nectarines, apricots, plums) are in season, chop a few. If not you can use grapes or apples.
Cut-up avocado, cucumber and tomatoes.

Wash and tear romaine lettuce. Mix with vinaigrette of your liking. Place on plate/platter. Top with desired items and enjoy.
