Roasted Garlic Mashed Potatoes

  • 1 head of roasted garlic (See below)
  • 2 lbs of red potatoes, scrubbed and cut
  • 1/4 cup olive oil
  • 1/2 cup Mimic Creme (or as much to your liking for creaminess) - or Cashew Cream
  • 1/4 cup Fresh chives
  • salt and pepper


Scrub and cut potatoes.  Boil until soft.  Drain and set aside.  Place garlic, oil, 2 teaspoons of salt and 1 teaspoon of pepper in mixer bowl.  Mix until garlic is a paste.  Add potatoes, chives and MimicCreme.  Mix until well combined and taste.  Adjust salt/pepper to your liking.  Devour.


Roasted Garlic

  • 1 head of garlic
  • 1-2 tablespoons olive oil

Slice top off head of garlic (see picture).  Drizzle with oil.  Place top back on garlic head.  Wrap tightly in foil.  place in a pan with edges (oil will leak out a little) and bake at 325 for one hour.  Cool and peel skin off cloves.  Set cloves aside to use and discard foil and skins.
