Roasted Peppers

  • Red, yellow or orange peppers
  • olive oil

 

Cut peppers in half, pull out seeds and membranes.  Rub inside and out with olive oil.  Place on grill and blacken on skin side.  cook until soft.  Place in bowl and cover to steam.  When cool enough to handle, remove skin and serve.

Great on sandwiches, salads or just as a side dish!
