Roasted Red Pepper Pesto

  • 2 red bell peppers
  • 3/4 cup slivered/sliced almonds
  • 1/2 cup olive oil
  • 1/3 cup fresh marjoram leaves
  • 2 tablespoons pine nuts (try to buy Italian, not Chinese!)
  • 2 tablespoons shallots
  • 1/2 teaspoon salt
  • pepper

Place all ingredients in blender and puree until smooth.

Perfect for GFCFSF pasta, grilled meat, a crudite dip or a sandwich spread!
