Roasted Strawberries - GFCFSF

These are amazing on coconut or almond yogurt, ice cream, pancakes, plain cake or in a parfait, and very easy to make.

16 ounces fresh strawberries
2 tablespoons honey or coconut sugar or maple sugar
1 fresh vanilla bean

Preheat the oven to 400 degrees. Line a baking dish with parchment. Remove stems, rinse and cut up berries. Dry on paper towels. Using a sharp knife, slice vanilla bean down the center and scrape the beans out of the pod. Put vanilla and berries in a bowl and drizzle honey or sugar over and mix lightly. Pour onto parchment paper.
Roast in the oven for 20 minutes.
