Roasted Sweet Potatoes and Apples - GFCFSF

This recipe is pretty versatile in that you can change the rosemary to thyme, use any type of apple that is a baking apple and add other vegetables, like fennel, if you choose.

1 pound (2 medium) sweet potatoes (or yams), scrubbed and cut into 1-inch pieces
2 Pink Lady or Fuji apples, cored and cut into 1-inch pieces (You don't want soft apples that will turn into mush)
2 sprigs of fresh rosemary, cut into 1-inch pieces
2 tablespoons olive oil (or oil of your choosing)
Kosher salt and freshly cracked black pepper

Preheat the oven to 450°F. Place a large rimmed baking sheet in the oven and heat until very hot.

In a large bowl, toss all ingredients. Carefully remove the baking sheet from the oven and spread the vegetables and apples on it. Roast, turning the ingredients over halfway through, for about 15 minutes, or until the potatoes are nicely browned and tender.
