Salsa Verde Hollandaise Sauce - GFCFSF

3 egg yolks
1/2 teaspoon salt
1/4 cup salsa verde or Tomatillo Salsa
1 cup melted GFCFSF margarine, heated until bubbling but not brown!
1 tablespoon lime juice

Place egg yolks, salt and lime juice in blender, blend for a few seconds at high speed until you have a smooth frothy mixture. Still at high speed, start adding hot margarine in a thin, steady stream, not too slowly. As you add margarine, the sauce should thicken. Add in salsa, blend until smooth. Adjust seasoning as needed.

This is AMAZING on eggs Benedict or fish tacos. For eggs Benedict, I grilled organic corn tortillas brushed with a touch of oil on both sides, topped them with grilled GFCFSF chorizo, poached eggs, avocado, more verde and fresh cilantro.
