Sausage and Broccoli Rabe - GFCFSF

This is a quick and easy dish, perfect for a weeknight.

2 pounds broccoli rabe (about 2 medium bunches), trimmed
1 pounds sweet Italian sausage - loose in small "meatballs" or links, cut into 1-inch pieces
4 tablespoons extra-virgin olive oil
4 garlic cloves, chopped
Salt and pepper to taste

Cut broccoli rabe into pieces. Cook in a large pot of boiling salted water, uncovered, until tender, about 5 minutes.
Drain, then place in bowl of ice water for 10 minutes to stop cooking. Remove and squeeze out excess water.

Heat 1 tablespoon oil in cast iron pan, cook sausage until done, remove to plate. Add garlic to pan, stirring, until fragrant but not browned, about 1 minute. Add in remaining oil, then broccoli, stirring to coat evenly. Add back in sausage and stir. Cook until everything is heated through. Adjust seasoning if needed.

Sprinkle with fresh lemon juice and serve over polenta, if desired.
