Sautéed Spinach

2 teaspoons olive oil
1 lb clean dry baby spinach leaves
1 small shallot, chopped
pinch nutmeg
Salt and pepper

Place oil in pan, sauté shallot for 2 minutes until soft, add spinach and cover. Cook on low heat for 10 minutes until spinach wilts completely. Season with nutmeg, salt and pepper to taste.
