Spicy Buttermilk Fried Chicken and Waffles with Cayenne-Maple Butter

Spicy Buttermilk Fried Chicken:
6 boneless skinless chicken thighs
1/2 cup Mimic Creme or Cashew Cream
2 teaspoons fresh lemon juice
2 teaspoons Tabasco Hot Sauce (more if you like it spicy)
salt and pepper

Dredging Flour Mix:
1 cup GF flour mix
1 teaspoon dry thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon cayenne powder

1-1/2 cups GF All Purpose Baking Flour
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 Tablespoon sugar
1 Tb safflower oil
3/4 cup milk substitute of choice
3 Eggs, separated
1 tsp vanilla

Cayenne-Maple Butter
4 tablespoons maple syrup
1 cup GFCFSF margarine
1/2 teaspoon cayenne powder*
1 teaspoon paprika
*This amount is suitable if you are giving this to kids. I used a full teaspoon of cayenne for my own.

For Waffles:
Mix the flour, baking powder, soda, salt, and sugar together.

In a separate bowl, whip the egg whites until they form stiff peaks.

Add the milk, egg yolks, vanilla and oil to the dry ingredients and blend together. With a spatula, slowly fold in egg whites with the rest of the ingredients. The entire mix should be light and fluffy. Brush waffle iron with oil and cook waffles.

For Cayenne-Maple Butter:
Bring margarine to room temperature. Put all ingredients in bowl and whip until light and fluffy. Set aside.

For Spicy Fried Chicken:
Place mimic creme, Tabasco, lemon salt and pepper. Mix well. Add thighs and turn a few times to make sure they are well coated. Place in refrigerator 1-6 hours.

Heat oil in large pan on medium high. Place coating dry ingredients in another bowl and mix well. Dredge chicken and coat well in flour. Place chicken in pan and cook until done, drain on paper towels until ready to serve.

Place waffle on plate, smear with a little Cayenne-Maple Butter, top with chicken, and then more Cayenne-Maple Butter. Drizzle with more maple syrup if desired.
