Spinach Salad with Bacon Balsamic Vinaigrette - GFCFSF

8 cups fresh baby spinach, washed and dried
1/2 cup dried cranberries or cherries
1/2 pound bacon, bacon grease reserved for dressing
1/2 cup walnuts, toasted

1 1/2 teaspoons Dijon mustard
1-2 teaspoons freshly squeezed lemon juice
5 tablespoons reserved, melted bacon fat warm so that it's liquid
2 Tablespoons Balsamic Vinegar
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Cook bacon and set aside. Reserve fat. Whisk all vinaigrette ingredients together in a non-reactive bowl. Toss vinaigrette and salad ingredients together in a large bowl. Serve.
