Spritz Cookies - GFCFSF

1 cup GFCFSF Earth Balance Soy-Free margarine
1 cup sugar
1 egg
1 teaspoon GF Vanilla extract
1/2 teaspoon GF almond extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1-1/2 teaspoon xanthan gum
2-3/4 cups Gluten-Free Flour Mix of your choosing
Non-toxic GFCFSF Food coloring (optional)

Combine margarine, sugar, egg and extracts, then add dry ingredients. If using food coloring, add now. Mix well.

Use dough at room temp (not cold), put into spritzer gun and press onto parchment lined trays in desired shapes.

Tap parts together prior to baking. Sprinkle with coarse/colored sugar, if desired.

Bake AT 375 degrees for 9-14 minutes (time will vary with oven)

Cookies will rise a bit. Remove from oven when edges barely turn brown. Allow cooling briefly prior to moving from cookie sheet to cooling rack.

Each batch makes about 40 cookies.
