Strawberry Cucumber Rhubarb Salsa - GFCFSF

Serve with any grilled meat.

1 1/2 cups 1/4-inch cubes rhubarb
1 quart strawberries, chopped
1 cup 1/4-inch cubes unpeeled seeded English hothouse cucumber
1/2 cup coarsely chopped fresh cilantro
Green parts of 2 scallions, slivered thin
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon fresh lime juice
Zest from one lime
salt and pepper to taste

Toss first 5 ingredients in a medium bowl to coat. Whisk honey, oil lime juice and zest, salt and pepper in a small bowl. 10 minutes before serving, mix all together and let stand to allow flavors to meld. If you mix it too far in advance, the lime will start to cook strawberries.
