Strawberry-Rhubarb Ice Pops - GFCFSF
I came across these Ice Pop baggies, called Zipzicles, from a friend's Facebook page and immediately placed my order. This recipe would work for any popsicle mold but these are a fun change for summer.
1-1/2 cups chopped fresh rhubarb
1-1/2 cups strawberries, stems removed, cut in half
1/2 cup water
1/4 cup sugar or 1-2 tablespoons honey
2 teaspoons fresh lemon juice
Wash and rough-chop rhubarb, place in pot on medium-low heat with sugar/honey. Stir and cook, covered, until fruit is soft. Remove from heat. Place rhubarb in blender with strawberries and lemon. Blend, adding water as needed. The mixture should be pourable but thick.
Using a funnel, fill Zipzicle bags (or popsicle molds) and freeze at least 6 hours. Makes 10 pops.
