Tomato Salad with Mustard Vinaigrette - GFCFSF

4 heirloom tomatoes (I used one orange, one yellow, one green and one red)
small bunch of fresh basil - about 6 leaves to chiffonade for the dressing, the rest for the salad
1 small shallot, minced
1 garlic clove, minced
1 tablespoon dijon mustard
1 tablespoon white wine vinegar
1 tablespoon lemon juice
1/4 cup olive oil or other light oil
salt and pepper, to taste

Slice tomatoes and place on plate. Tuck in about a dozen or so fresh basil leaves between the tomatoes.

In bowl, mix other ingredients and cut up basil with a fork until well mixed. Pour over tomatoes and refrigerate until ready to serve.
