Twice Cooked Baby Potatoes

Ingredients:

  • 16 -20 small baby gemstone potatoes (aka fingerling potatoes)
  • 1-2 tablespoons Earth Balance Soy Free margarine or olive oil
  • 1 tablespoon minced fresh rosemary
  • 2 cloves minced garlic
  • salt
  • pepper

 

Directions:

  1. Wash potatoes.
  2. Boil potatoes about 15 minutes or until just tender, and drain.
  3. Coat with margarine, garlic, and rosemary. Let cool until cool enough to handle.
  4. Preheat oven to 400 degrees.
  5. Place potatoes on a large rimmed baking sheet.
  6. Using the flat bottom of a spatula gently press down on each potato until it flattens slightly and the skin splits.
  7. Sprinkle with salt and pepper.
  8. Bake for 20 - 30 minutes until the potatoes are browned to your taste.
