Pine Nut Cookies

- 1 c pine nuts
- 1-2/3 c almond flour
- 1-1/3 c sugar
- 2 large egg whites
- 1/4 c powdered sugar
Preheat oven to 375. line cookie sheets with parchment or cooking spray. Put pine nuts in a shallow bowl or a plate. Mix almond flour and egg whites until smooth. With wet hands, scoop a rounded tablespoon of dough and shape into a ball (it is a little glocky). Roll in pine nuts to coat all over. Repeat, place 2 inches apart on cookie sheet. Bake until golden. 13-15 min. Do not overcook as dark brown nuts are bitter. let cookies cool completely on baking sheet. Sift powdered sugar over tops.
