Fried Amarillos


Fried Amarillos - GFCFSF

  • 2 very ripe yellow (to black) plantains (aka amarillos)
  • 1/2 cup safflower or sunflower (or other light flavored oil)
  • 3 tablespoons Earth's Balance GFCFSF Soy Free margarine
  • 1/2 fresh lemon
  • salt


Peel and slice plantains diagonally.  Heat oil with margarine on medium heat.  Once oil is hot, fry plantains until light golden brown on one side, flip over and repeat.  Remove to paper-toweled plate, immediately sprinkle with lemon juice and salt.  YUM!

Make these as close to serving as possible.  The longer they set, the harder they get.
