Meat Stuff Zucchini

  • 2 medium zucchini, cut in half lengthwise
  • 1/2 lb ground meat
  • Oil
  • Garlic
  • oregano
  • 1/2 cup onion, chopped finely
  • 8 oz marinara sauce

Heat 2 teaspoons oil and cook garlic until soft, add onion and cook until soft. Remove onion to bowl and brown meat in same pan. When meat is done, drain and add onion and oregano to meat. Lightly scoop out seeds from zucchini and discard. Fill the zucchini halves with meat mixture and top with marinara. Cover pan with foil and place in oven at 375 for 25 minutes or until zucchini is fork tender.
